Cathy Gallant loves cooking for seniors. “When someone enjoys a meal, it means they enjoy the day,” she says with a proud smile. “I love watching people light up as they eat, it’s just the greatest.”
Cathy, a Red Seal Chef, has been the Director of Culinary Services at Birkdale Place Retirement Residence for over 4 years – and in that time, she’s learned the resident favourites - ribs, corn muffins and corn on the cob – AND she’s learned how to mix those favs with superfoods like quinoa, kale, and spinach to make sure everyone is getting a well-balanced meal.

“I think about what people want first and foremost,” she says. “Then I make sure those foods are nutritious, AND delicious.”
Delicious comes from a laser focus on complimentary flavours, colours, and textures – at every meal. And although those yummy meals can require some time and preparation (which she loves to work with the team on), her experience at Birkdale Place has also reinforced a real food basic – people also find love and comfort in simplicity.
“One of our residents’ most loved breakfasts is a simple Yoghurt Parfait. It’s got all the elements, texture, flavour, colour, nutrition – but it’s yoghurt and it makes people smile – and what’s better than coming to work and making people happy? Absolutely nothing.”
Chef Cathy's Simple Smile Yoghurt Parfait Recipe
As you create your Parfait, remember to consider your dietary limitations, allergies, and requirements – our recipe changes a bit depending on the seasonal foods available, but here’s the base:
1 cup yoghurt (any kind works, try Greek for added nutrition)
¼ cup granola (spice yours up with cinnamon, oats, walnuts, and almonds)
¼ cup of fruit (strawberries, blueberries, raspberries all work well)
A drizzle of honey over the top for some added sweetness
