Carving Up a
Viva Las Vegas
– Dorchester Style

Singh recently treated residents
at Revera’s Heartland retirement
community in Okotoks, Alta., to a
food carving demonstration. Using a
selection of fresh fruits and vegetables,
including carrots, cucumbers,
mangos and beets, Prem created a
colourful bouquet for the residents to
enjoy. “We always try to do different
food demonstrations each month,”
says Prem. “We’ve had demos on
chocolate, smoothies, wine and
cheese and more. Our residents really
enjoy these events.”
Recently, residents and staff at
Revera’s Dorchester retirement
community in Kelowna, B.C., held a
Las Vegas Stay-Cation. They brought
Vegas to the Dorchester for a fabulous
week of entertainment and events,
including a Viva Las Vegas variety
show, a mystifying magic show, a
casino afternoon and, of course, a
performance by the King himself.
They even had an Elvis-themed menu
that included fried peanut butter,
banana and bacon sandwiches with
Pepsi Cola – Elvis’s favourite food
They’ve been scientific pioneers,
challenged stereotypes in politics,
built understanding and helped
to shape the face of modern
medicine. Today, their words of
wisdom continue to inspire.
People grow through experience
if they meet life honestly and
courageously. This is how
character is built.
Without knowledge the world is
bereft of culture. And so we must
be educators and students both.
The power to question is the basis
of all human progress.
Optimism is the faith that leads
to achievement. Nothing can be
done without hope and confidence.
I attribute my success to this - I
never gave or took any excuse.
